Thomas Usher grists in 1914

A Thomas Usher's 90/- Ale recipe.
Interested in what went into Thomas Usher's Beers? I’m sure you are. Here you go.

Starting with base malt, all the beers use pale malt. Not much unusual about that. I won’t try to spin it out any more.

All the Mild Ales contain about 5% crystal malt. Again, nothing particularly odd about that. Crystal malt was originally created for use in Mild Ales. Presumably to add sweetness and body.

The only other malts appear in the Stouts. A combination of brown and black malt. Giving their grists a very London look. At around 17%, the roasted malt content is quite high.

The overall malt content is pretty normal at 75% to 80%. Which is pretty much dead on the UK average of 78.5%.

Every single beer contains some flaked maize. Though the proportion varies quite a lot, from 5% to 13%. It’s notable that the highest amounts appear in the Pale Ales.
