Considering that these were dark beers, there's not a great deal of coloured malt in the grists. Fullers, typically, only used base malt.
The No. 1 invert in Barclay Perkins KK (bottling) is a bit strange. In the brewing record a “3” has been crossed out and a “1” written in red. Obviously, it was a last-minute substitution.
CDM stands for caramelised dextro-maltose. It’s often found in dark beers. I’ve no idea what PEX was. Other than that Fullers used a lot of it.

Could PEX be the same thing as Proteinex - a non-diastatic malt extract used for head retention?
