When you serve beer, you get this odd texture compared to beer as it should be. A more modern german phrase would also be Fadenziehen. Langwerden is caused by lactic acid bacteria mostly Pediococcus, which produces exopolysaccharides or EPS (some saccharides actually do have health benefits). You can also observe it sometimes in Lambic and Oud Bruin.<br /><br />Former Prof. Methner (now retired) of the VLB, wrote his phd thesis in 1987 (Über die Aromabildung beim Berliner Weißbier unter besonderer Berücksichtigung von Säuren und Estern) about mixed fermentation of Berliner Weißbier.
